Tomato Mango Salso

This salsa is the perfect companion to the Tacofino Fish Tacos! You can also enjoy it with tortilla chips or as a garnish on grilled fish or chicken.

 

INGREDIENTS

Serves 4

  • 3 tomatoes, from your garden or your local market is preferable 😉
  • 1 mango
  • 1/4 jalapeño pepper
  • 1 handful of cilantro leaves
  • Juice of 1 lime
  • 1/4 medium sized red onion
  • Salt and pepper to taste
  • 1 avocado (optional)

*Don’t have fresh mangoes? No stress! You can use frozen mango cubes!

METHOD

  • Cutting the tomatoes is key for this recipe. Take out your best cutting knife and cut the tomato into small dice. If your tomatoes are very juicy you can drain them by passing them over a strainer or simply through your hands.
  • Cut the onion as small as the tomato or smaller!
    Peel the mango and cut like the tomato or if you prefer bigger chunks, go for it! I prefer to keep pieces small so that you can enjoy all the flavours in every bite.
  • Mince the jalapeño, excluding the seeds, unless you want a serious amount of spice. That is your call.
  • Add all the chopped ingredients to a medium sized mixing bowl with the juice of 1 lime.
  • Mince the coriander and add to the mix.
  • Add salt and pepper to taste.
  • You can chop up an avocado and mix it in!

 

I recommend letting the flavours settle for about an hour before serving…that is if you can wait that long!
