Winter Vegetable & Chickpea Soup For The Entire Family

This is the perfect recipe to keep you and the family warm on a chilly winter's day. Best enjoyed by the fireplace or Christmas tree after playing outside!

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped finely
  • 1-2 sweet potatoes peeled & diced finely
  • 1 tbsp Renato Fresh Garlic or 2 garlic cloves, crushed
  • 2 carrots peeled & diced finely
  • 2 celery stalks diced finely
  • 1/2 red pepper diced finely
  • 1 garden tomato diced finely
  • 1 zucchini diced finely
  • 4-6 asparagus chopped
  • 2 bay leaves
  • 1/4 tsp chili flakes *optional
  • 2 tsp Herbes de Provence
  • 1 L homemade chicken or vegetable broth
  • 1 cup cooked chickpeas (cooked from scratch or canned)
  • S&P to taste

Instructions
 

  • Heat olive oil over medium heat. Sautée onion for 3-5min.
  • Add the sweet potatoes. Cook for another 3-5min.
  • Add the garlic.
  • Add the diced carrots, celery, and red pepper. Cook for 2min.
  • Add the tomatoes, herbs, chili flakes. Cook for 1min.
  • Add the chicken broth and bay leaves. Bring to a boil then reduce to low. Simmer for 10min.
  • Add the asparagus and zucchini. Simmer for another 10min.
  • Add the chickpeas and salt & pepper to your liking.
